Tonight Zach and I decided to try a little experiment – gluten-free pizza!
The crust was homemade with rice flower, xanthan gum (apparently this is a great substitute for the stickiness of egg yolks), olive oil, honey, salt and water. We topped it with organic tomato and basil sauce, grilled chicken, fresh basil, mushrooms, green peppers, and two kinds of cheese – goat mozzarella and a semi-soft sheep’s cheese.
Uh… delicious!! We’re so proud and stuffed!
